Chewy Sourdough Granola Bars (Kid-Friendly)

Ingredients:

  • 1/2 cup fed sourdough starter (active, bubbly, any flour)

  • 1 cup rolled oats

  • 1/2 cup peanut butter (or almond butter)

  • 1/3 cup honey (or maple syrup)

  • 1/2 tsp vanilla extract

  • 1/4 tsp salt

  • Optional add-ins: 1/3 cup chocolate chips, raisins, dried cranberries, seeds (pumpkin, sunflower), or shredded coconut

Instructions:

  1. Prep your pan: Line an 8x8 inch baking dish with parchment paper.

  2. Mix wet ingredients: In a medium saucepan over low heat, warm the peanut butter and honey together until smooth and combined. Remove from heat and stir in sourdough starter and vanilla.

  3. Combine dry ingredients: In a large bowl, mix the oats, salt, and any optional add-ins.

  4. Combine wet and dry: Pour the peanut butter-honey-starter mixture over the oats and stir until evenly coated.

  5. Press into pan: Transfer mixture to the prepared pan and press firmly with a spatula or your hands to create an even layer.

  6. Chill: Refrigerate for at least 2 hours, or until firm.

  7. Cut into bars: Remove from pan, cut into squares or rectangles, and enjoy!
