Fruit Pastry Squares (Sourdough Version)

FRUIT PASTRY SQUARES

SOURDOUGH FRUIT PASTRY

First make the sourdough pastry

Ingredients

  • 2 cups all-purpose flour

  • ¼ cup sugar

  • ½ tsp salt

  • ½ cup softened butter (1 stick, not cold)

  • ½ cup sourdough starter (active or discard)

  • 2–4 tbsp milk (as needed)

  • 1 tsp vanilla (optional but nice)

Instructions

  1. Cream butter and sugar together until smooth.

  2. Mix in sourdough starter and vanilla.

  3. Stir in flour and salt.

  4. Add milk 1 tbsp at a time until a soft, rollable dough forms.

  5. Wrap and chill 30 minutes (just to firm up, not to laminate).

Assemble the Fruit Pastry Squares

  1. Roll dough to about ¼ inch thick.

  2. Cut into rectangles.

  3. Spoon 2 tsp cherry preserves onto one side.

  4. Fold over, seal edges with a fork.

  5. Brush with egg wash.

Bake

  • 375°F (190°C)

  • 18–22 minutes

  • Light golden, not deeply browned

Icing

  • 2 cups powdered sugar

  • 3–4 tbsp milk

  • 1 tsp vanilla
    Drizzle once pastries are cool.
