Fruit Pastry Squares (Sourdough Version)
FRUIT PASTRY SQUARES
SOURDOUGH FRUIT PASTRY
First make the sourdough pastry
Ingredients
2 cups all-purpose flour
¼ cup sugar
½ tsp salt
½ cup softened butter (1 stick, not cold)
½ cup sourdough starter (active or discard)
2–4 tbsp milk (as needed)
1 tsp vanilla (optional but nice)
Instructions
Cream butter and sugar together until smooth.
Mix in sourdough starter and vanilla.
Stir in flour and salt.
Add milk 1 tbsp at a time until a soft, rollable dough forms.
Wrap and chill 30 minutes (just to firm up, not to laminate).
Assemble the Fruit Pastry Squares
Roll dough to about ¼ inch thick.
Cut into rectangles.
Spoon 2 tsp cherry preserves onto one side.
Fold over, seal edges with a fork.
Brush with egg wash.
Bake
375°F (190°C)
18–22 minutes
Light golden, not deeply browned
Icing
2 cups powdered sugar
3–4 tbsp milk
1 tsp vanilla
Drizzle once pastries are cool.
